BANARASI BIRYANI


INGREDIENTS:

Mutton : 1 kg Rice : 750 gms

Raw papaya (paste) : 1 tbsp Onions (sliced) : 2

Tomatoes (chopped) : 250 gms yogurt : 250 gms

Ginger Garlic paste : 1 tbs[ Red Chili Flakes : 2 tsp

Turmeric Powder : 1 tsp Mix pickled : 2 tbsp

Qasuri Meethi powder : 1 tbsp Garam Masala : 1 tbsp

Chinese Salt : 1 tsp Salt : To Taste

Curry leaves : 10 Green Chilies: 2

Orange Food Color : few drops Lemons : 2

Oil : As required Coriander Leaves : 1/2 bunch

Mint Leaves : 1/2 bunch Fried Onions : 1/2 Cup

RECIPE:
  • Marinate Meat with Salt,Chili,Turmeric powder,Ginger Garlic paste,lemon juice,Mix pickled,Raw Papaya Paste,take aside for 2 hours.

  • Heat up Oil, fry Onions,then add marinated meat,Tomatoes, Yogurt cook on high flame to bring Oil on surface.

  • Now add some Water to cook Meat,when Meat will be ready, switch off the flame.

  • In other pan add Water to boil Rice when getting boil add,Salt ,Garam masala , Green Chilies, Mint Leaves, Curry Leaves & Rice .

  • Boil till Rice will cooked half then drain out it.

  • In a Big skinny make a layer of Meat, then Green Chilies and Rice,on the top garnish with Coriander Leaves, Orange Food Color, Fried Onions, cook on dumm (slow flame) for 15- 20 minutes.

  • Serve with Raita.
